Yosi - Elmo Birthday Cake

Yosi turned one yesterday and he loves Elmo. The cake is an 8" vanilla and raspberry and I, Niamh aged 46, still love Sesame Street!

The cupcakes are chocolate fudge, toppers are handmade and edible.

Super Mario Bros Fairy Cupcakes

I love these.  I know I say that after nearly every cake I make but I do really love these.  They were made for my son's friend and are a light chocolate cake with a fondant top, decorated in the style of Mario Bros.

More cupcakes

Because of the market I've been making more cupcakes than ever.  Today I decided to try my hand at carrot cupcakes.  I took these to my kickboxing lesson to see if they'd slow our instructor down (it didn't) but everyone seemed to like them.  Always good to find new tasters.

Balbriggan Christmas Market

I have got cakes to post.  Even more by the time New Year rolls by but in the meantime here's a picture of the red velvet cupcakes we made for the Balbriggan Christmas Market today.  We made red velvet, vanilla chocolate, chocolate chocolate (yep), snickerdoodles, rolled cinnamon and sugar and . . . am too tired to think of what else we made.  It was fantastic and thanks to everyone who came to see us and say hello.

Ribbon Roses - Tilly

A simple vanilla madeira cake, triple layered with Italian meringue butter cream before being covered with fondant and decorated with handmade pastillage ribbon roses.  The fairy cakes were also vanilla and topped with a delicious vanilla cream cheese frosting.  Again, these were decorated with handmade fondant roses.

Wedding Cake for Jackie


It's funny, all our wedding cakes are named for the brides.  Shall have to look into changing that.  This cake was a feat in itself.  The bottom, 12", cake is Chocolate Biscuit.  The outside of the cake is decorated with white chocolate cigars and the top of the cake is covered in layers and layers of strawberries and red currants.
The next cake, 10", is a Sticky Ginger and Date Cake.  It is covered in fondant before being recovered with a white chocolate fondant.  The top of the cake is decorated with fondant strawberries and leaves.
The top cake, 8", is a zesty lemon madeira.  This was layered with lemoncurd and lemon buttercream before being covered with fondant.  The 'strawberry plant' on top is completely edible and is made of pastillage.
As for the fairy cakes.  These were made in a variety of flavours.  Chocolate Orange, Raspberry and Lemon.  They were topped with either fondant, buttercream or a fabulous white chocolate and sour cream icing.  They were further decorated with handmade flowers, buttons, ribbons, fruit and chocolate curls.


Christening Cake for Jamie

10" Chocolate Biscuit Cake with an 8" Lemon Madeira cake on top.  The bears are all made from fondant and are edible as is the bow and the blocks.  The 'ribbon' stands proud of the cake and has been styled to look like it's threading in and out of the cake.  In total we made 90 cupcakes in varying designs and 50 of those were boxed up to be taken home as 'favours'.

Alice turns 40

This is a 10" Zesty Lemon Cake.  Decorated to look like an exploding parcel.  All the stars, both large and very, very small are handmade.  As is the ribbon.  We also included cake flares and sparklers for more Wow.
We also made a variety of cupcakes/fairycakes, decorated with Italian Meringue Buttercream and handmade stars.

Coconut and Lime Fairycakes (cupcakes)


These are one of my favourites.  A delicious lime flavoured cake topped with a lime buttercream and dipped in coconut.  I love the dry citrus flavour you get from limes . . . then, you add coconut and yum!

Orange Blossom Fairy Cakes (cupcakes)



These are Orange flavoured cupcakes topped with a orange blossom flavoured icing. They were then decorated with a variety of sugar flowers.  and have a lovely delicate flavour. ( They were absolutely divine - Larissa Comiskey )

The Very Hungry Caterpillar - by Eric Cole (and me )

Lemon fairycakes covered in lemon buttercream.  As many or as few cakes as you require but I would reccomend 22 to get a nice caterpillar.  The head is a lemon madeira that has been double layered with lemon buttercream and lemon curd.

FAIRY Cakes - NOT cup cakes. . . please?










Bernie got a phone call for these. All we were told was that the girl in question, who I think was 3 or 4, wanted pretty insects, and these are pretty.
